END GRAIN vs. EDGE GRAIN

All blocks for sale are end grain.

If you are looking for an edge grain butcher block, I can build to your specs.  If you are not sure of the difference, I will explain.

Note the photo to the left.

End grain blocks are always built with many little squares, all glued up together.  The wood fibers are facing up.  Edge grain blocks are usually strips of wood running the entire length of the block.

Think of taking a sharp knife to a paint brush.  If you try to cut the bristles of the brush by cutting into the tips of the bristles, you will do very little damage.  Think of this as an end grain block.

On the other hand, if you cross-cut the bristles, you will do a lot of damage.  Think of this as an edge grain block.

If you watch any cooking shows, you will see that chefs prefer end grain cutting boards because they show scratches less and are much kinder to your expensive steel's edge.
